Are the subs 1000 watts RMS or 1000 watts Max?
Always go by the RMS rating NOT the Max rating. Max ratings are for sales promotions only and DO NOT apply in the real world.
You want an amp that will drive the subs with as close to the same RMS rating as possible without exceeding the limits of the subs. For example, if you have 2 subs rated at 500 W RMS each (1000W RMS total for both together) then you want an amp that is rated for no more than 500W RMS per channel (1000W RMS total). You can get by with a smaller amp but it needs to push at least 50-60% of the wattage the subs are rated for so in the above example you would want a minimum 250-300W RMS per channel (500-600W RMS total).

    the more the better but many subs over state the watts, here is the deal many less expensive subs over state the watts, they say 1000 but may only handle 1000 for a few seconds before you see smoke and smell varnish, this does not mean they are bad but in marketing they use the specs to get people to buy their Products so 250 continuous might just be a perfect match.

    i believe in over powering speakers and keeping the amps gain down, heck i still have 61/2 ‘s from like 10 years ago that are double powered and i have had speakers like you are talking about at half power and they performed just fine, it is after all just a decibel or two.

    make sure to wire the subs properly to get the most from the amp and do not use the amps gain as a volume control, if you have to crank the gain up 1/2 or in most cases 1/4 there is a problem.

    so try that amp, it should work fine but the best thing would be and amp that puts out 1000w. and a sub that can handle 1000w. but it really is a guessing game.
