Why would go against a recommendation?

    Go cheap, have problems.

The bigger wire is recommended so the amp can get more current. More current means a better running amp. Smaller wire will starve the amp for power.

It should work fine. I have a 640W amp that had 8 gauge for the longest time. Most amps take 8 gauge anyways even though I have had 4 gauge for most of my car audio work.

8G is pushin it for a 500. Question is, is it pulling a TRUE 500W or is that inflated peak power? If that’s peak power, ya 8G is fine cuz RMS will be like 250ish.
